Susan Jane White's Prebiotic Apple Crumble with Chicory Syrup

Feast your eyes on this gorgeous prebiotic Apple Crumble made by Susan Jane White on the Six O’Cock Show with our low sugar Chicory Root syrup.

“Oats are Ireland’s superfood . The fibre in oats behave as a prebiotic, feeding those disco dudes in our gut. Then there's pectin in stewed apples, another prebiotic party for our pipes! But that's not all - I have discovered chicory root syrup by a local Irish brand Homespun located in the same aisle as honey and maple syrup. Chicory root syrup is a bonkers-delicious prebiotic. We're using it on porridge too, but Homespun really helps to make this crumble sing. Think opera. For your gut.” - Susan Jane White

INGREDIENTS

10 large apples

Pinch of ground cinnamon

90g chicory root syrup

90g butter or extra virgin coconut oil

100g Irish oats 70g all-purpose flour, gluten-free flour, or rice flour

3 tablespoons golden caster sugar

METHOD

Start by cranking up the oven to 180C.

Slice the apples into bite-sized pieces and pop into a crumble dish. I leave the skin on most of the apples and no one seems to notice (score!).

Gloss with cinnamon and chicory root syrup.

Cover with foil and bake in the oven for 15-30 minutes depending on the type of apple you choose.

For your crumble, rub the butter or coconut oil into your oats, flour and sugar. This is easiest in a large bowl - less mess. You want to pinch the fat together with the flour, and rub it off your sticky fingers until it is evenly distributed and the mixture has formed small clumps.

Sprinkle your crumble over the stewed apple (remove the foil first) and return to the oven uncovered. Bake for a further 20 minutes.

You'll notice lickysticky fruit bubbling up around the edges, and the top turning a touch golden. Time to remove from the oven.

You can tuck in straight away, or leave to cool and serve with live creamy natural yoghurt (a hefty dose of probiotics!)
