Easy Healthy Tasty Pancakes - Our Top Tips

We’ve heard it said that “pancakes are a recipe you need to get into the swing of.” Having had more flops than flips when we first started making ours, we agree. Here we share 10 Top Tips to inspire you to create healthy, easy and tasty pancakes. Thanks to food blogger Michelle Hunt, aka Peachy Palate, for a few pro tips we’ve included.

  • Opt for Oat flour

Oat flour is less refined than wheat flour. Simply blitz oats in a Nutribullet or any high speed blender. Oat flour is absorbent, so your batter may need more milk - adjust as needed.

  • Go gluten free

Oat flour can be gluten free if using gluten free oats. Buckwheat flour is also great option for gluten free pancakes.

  • Pack in Protein

Replace 2 tbsps of flour in your recipe with pea protein or a clean protein powder of your choice. Be sure to mix it in well.

  • Hold the refined Nutella

Because we have the perfect healthy chocolate fix for your pancakes. Mix 2 tablespoons of cacao powder into the flour before making the batter, and toss some dark chocolate chips into the finished batter. Then drizzle your finished pancakes with Homespun’s super low sugar Chicory Root Syrup.

  • Berry pretty

Similarly, a handful of berries can be added to the finished batter. Not only do they taste good, your pancakes will look extra pretty too.

  • Go nutty

Add a scoop of nut butter to your batter for a yummy nutty taste. We are partial to Irish brand Nutshed, made in Tipperary with single origin peanuts.

  • Size matters

For nicely shaped pancakes that are sized just right, we use a soup ladle to add our batter to the pan. Works a treat.

  • Temperature

The hotter the pan, the crispier the pancake is the rule of thumb. Lower the heat if you prefer a softer finish.

  • Choose the right pan for the job

Select a heavier cast iron pan for traditional pancakes. For crepes, go with a lighter thinner pan.

  • Butter me up

Frying options are down to personal taste. Extra virgin coconut oil is a great plant-based option; we also like to use real Irish butter for purity and flavour.
